Global Search returns a set of business views declared in its Searched Business Views, according to the Search Type configured. If you want your Global Search to work across all entities and all attributes, you have to:
Make sure that all Attributes are Searchable
Add one Searched Business View per Entity using Search Type Full-Text (which is the one looking at all Searchable attributes)
